Enjoy this kale salad recipe put together by Whitney Schultz.
- 2 bunches kale
- juice of 1 lemon
- 4 oz goat cheese, crumbled
- 1/3 cup cranberries
- 1/3 cup walnut pieces
- 1 avocado (not pictured, optional)
- 1 pint cherry tomatoes (not pictured, optional)
- 3 tbsp Colavita Olive Oil
- 2 tbsp Colavita Balsamic Glace
- Tear kale into bite size pieces. Massage kale by hand with the juice of one lemon, Add the rest of the goodies and mix in the olive oil and balsamic glace to finish. Add salt and pepper if desired. Enjoy!
